Gross-looking lunch alert! Gross-looking lunch alert! Like I said, this stuff reheats well…but looks disgusting (as do most of my lunches, apparently). I forgot too late how unappealing heated-up avocado is, so I didn’t end up eating that part…what a tragic waste.
A very sweet woman from another team nearby brought over a huge catered salad, saying her team had eaten only the pizza she had ordered, leaving the salad untouched. Of course being the salad monster I am, I happily helped myself to a bowl.
I had brought the last of these bars as a snack, and although I wasn’t really hungry after eating that salad, I got bored and ended up eating it anyway.
This was a simple, easy, and pretty healthy dinner if I do say so myself. The salmon was roasted with a honey-chipotle glaze and was pretty tasty, but a little on the dull side (I think most of the glaze ended up sliding off during the roasting process, so it wasn’t as flavorful as I had hoped). All in all though, not bad.
Jeff and I agreed we were in need of a snack, so I whipped up these orange creamsicle smoothies. It’s just a frozen banana blended with a peeled orange (I used three clementines, because that’s what I had on hand), about 3/4 cup of coconut milk (I used toasted coconut almond milk from Califia Farms), and a dash of vanilla extract. It was pretty tasty and refreshing – kind of like a healthier Orange Julius. The summery drink felt especially appropriate/needed today, seeing as it was the first day of spring and we’re expecting yet another nor’easter tomorrow – d’oh! Oh well – looks like we’ll be getting one (hopefully) last snow day before spring sets in.
