Back to the old standby today.
I definitely get hungry earlier when I eat oatmeal rather than eggs…which seems odd, because oatmeal is so filling. Maybe it’s the sugar. Again, I’m sorry for my vomit-looking lunch.
WHAT?! A CLEMENTINE?! I know, you guys…I’m full of surprises.

I’ve been eating dinner later and later these days. This was a good one, though – the white beans are lightly mashed with a ton of parmesan and sharp cheddar, and the kale is sauteed until almost crispy, then brightened up with lemon. The original recipe called for an egg on top of the kale instead of the salmon I used (it was actually presented as a breakfast recipe, which is interesting). That sounds delicious, but Jeff’s not a fan of runny yolks (I don’t even want to think about his tragic hatred of everything I love anymore). Somewhat ironically, he ended up not eating with me tonight – he had a last minute dinner with his mom – but I think salmon complemented the bean and kale combo perfectly. I just roasted it with salt, pepper, olive oil, and a little honey. Recipe to follow. (I know I’m getting behind on recipe posting, but I just haven’t had the energy this week – I’ll make it up to you, I promise!)
You’d think I had a clementine tree in my yard…if only.
