Happy March! Jeff & I decided we’re going meat-free for the month. This won’t be a huge change for me – as you’ve probably noticed, I don’t eat a ton of meat as it is – but we decided to end February with a meaty bang (gross).
9:44 AM:

Vanilla yogurt with berries, granola, and toasted coconut; coffee
The sun was shining this morning, and I decided to switch things up a bit and trade my normal oatmeal for yogurt. It looks like a ton of food because I really pile the berries on when I get yogurt, but there’s probably only about 1/4 cup to 1/2 cup yogurt in there. I normally go for greek yogurt or skyr, but my office usually only has normal vanilla (or gross strawberry) available.

You guessed it – baked eggplant parm with lentil pasta; clementine
Different day, same old lunch – ho-hum. Despite being delicious, I’m starting to get a little bored with my eggplant parm…one more day to go!

Two orange Starburst. Booooo.
It’s Associate Appreciation Week at my office, so we arrived to bags of assorted candy at our desks. I was VERY bummed to open this pack of Starburst and find TWO orange, which is by far the worst flavor. I ate them anyway, but I’m thinking about sueing.

Smoky gouda burger with fries; 99 Problems But a Peach Ain’t One sour beer from The Larimer Brewing Company
Since we’re going meat-free starting…well, today, we decided to end the month with half-priced burgers from Ulysses, one of our favorite local gastro pubs. I debated sticking with water since I try not to drink during the work week, but ended up succumbing to a delicious sounding and ridiculously named peach beer (Ulysses has a HUGE beer list – I couldn’t resist). The burger was delicious and I ate the whole damn thing (and most of the fries), but my stomach was NOT pleased after – I spent the rest of the night (and the majority of the next morning, at least so far) feeling pretty nauseous. Worth it? I think so. Getting older is no joke, guys.
