Oh hey, breakfast looks almost exactly the same as yesterday! IT WASN’T, though: look, it’s strawberries instead of raspberries! And plain oatmeal instead of apple cinnamon! Variety is indeed the spice of life, friends.

Okay, lunch was exactly the same as yesterday, minus the Cheez-Its. Still delicious, though! Sorry it looks so gross – everything I did to try to make it better made it worse.

My co-workers made a Starbucks run yesterday, but I didn’t partake…I did, however, accept the offer to try my desk mate’s everything croissant. It was pretty tasty!

Graze lemon drizzle flapjacks
These may look like the same apple cinnamon flapjacks, but your eyes deceive you! They’re LEMON DRIZZLE flapjacks! Anyway, I was feeling deprived after denying myself Starbucks, so I whipped these guys out.

Yogurt covered gluten free mini pretzels
Hanger struck again by the time I got home, so I grabbed a handful of these not very good pretzels (you may remember them as my car snack from last week’s Target run) while I rummaged around for dinner. They did the trick.

Quinoa Cowboy Burger on a bagel thin with a pepperjack “thin slice,” 1/2 an avocado, and cholula; sweet potato with cinnamon brown sugar butter
Oof. While tasty, this dinner was rough to photograph. Look, I’m no professional food photographer, and I have terrible patience. I tried my hardest. (No I didn’t.) I’m sure this is one of those things that’ll get better as time goes on, but…this is pretty cringe-y. Sorry, guys. Anyway, I talked about my love for Quinoa Cowboy Burgers (which I had been incorrectly referring to as “Cowboy Quinoa Burgers”) at length here, if that’s something you’re into (there’s even a non-recipe recipe there). As previously mentioned, Tuesdays are my solo nights, and these burgers are a staple for me.

Stove-popped popcorn with Trader Joe’s onion salt
I thought I was over my craving after last week’s back to back popcorn fix, but I was watching an episode of The Kitchen last night and Katie Lee was wolfing some popcorn down. I don’t know if it was the crunching or the vigor with with she was shoveling the kernels into her face, but I immediately went into the kitchen to whip some up. I decided to give the onion salt another try, and I’m glad I did – it’s actually pretty great! I think the problem before was that I was doubling down on the salt…actually tripling down, if you include the salted butter. This time I skipped the butter and didn’t add any additional salt, and it was perfect. I also made about 1/3 of what I normally make – the instructions on the kernel container say to use half a cup of kernels, but that makes enough popcorn to feed a small family for a week, and I always end up throwing 3/4 of what I make away. Something between 1/8 and 1/4 cup were just about right to satisfy my snack attack.
